This recipe here may be my absolute favorite to make! Chicken fajitas are a staple in our home as it’s something everyone in the family loves. What isn’t there to love a flour tortilla filled the goodness of chicken, onions, bell peppers, sour cream, refried beans, and a delicious salsa and cheese topped on it?

I love cooking my chicken in avocado oil. A teaspoon goes a long way with it. I put thinly sliced chicken breats in a pan, add the oil, seasonings (salt, pepper, paprika, onion powder, garlic powder, parsley, and cilantro), and bake at 400°f for 30 minutes or until fully cooked through.
While the chicken is cooking I add sliced bell peppers, tomatoes, and onions to a pan frying pan, add a dash of avocado oil, a little lemon juice, and the same seasonings from above. I cook on a low-medium heat tossing every couple of minutes until all ingredients are softened and start to become caramelized.

After the chicken is finished I slice up the chicken, add it to the frying pan, and cook for a few minutes longer and it’s ready to serve! I warm up some flour tortillas, add a layer of refried beans and sour cream, a layer of the chicken and veggies, and then top with salsa and a shredded Mexican cheese blend. The kids go crazy for this every time it’s made and always want to take leftovers to school the next day.
